Background: "Akeno Koshu" was born by believing in the potential of varieties without relying on the brewing techniques that have been required so far, such as sugar supplement, acid supplement, and sur lee.
Winemaking: After hand harvesting, carefully squeeze over timeNaturally fermented with indigenous yeast, malolactic fermentation, stored in stainless steel tanks or old French oak barrels for 7 months.
Grapes: Koshu
Tasting note: Aromas are rich and attractive with impression of fresh pears, white peaches, honeysuckles, rosemary, cloves and minerality reminiscent of stones. On the palate, smooth mouthfeel and dry. The vibrant acidity is persistent and reinforces the middle to the the back palate. The malolactic fermentation, which is rare in Koshu, is naturally performed, and the taste is different from that of Koshu. With its rich aroma and soft, complex depth, you can feel the possibility of aging.
